Full mixes: choose Multi-Track MIDI when you want a full-song draft across multiple instruments. Single parts: choose an instrument and transcribe that part (optionally isolating it first) when you want the cleanest MIDI or notation for one line.
When a mix is dense, isolating a part before transcription can reduce overlap between instruments. If your goal is “just the guitar riff” or “just the vocal melody,” start with stem separation, then convert that stem to MIDI or MusicXML.
